Buffalo Chicken Balls with Blue Cheese

My husband loves when I make Buffalo Chicken Balls with Blue Cheese and is one of his favorite meals.  I found this recipe in a Glamour magazine a year ago and have made it quite a few times, modifying ingredients to our liking.  It is always delicious and it remains at the top of my husband’s list. We love hot wings and order them every time we get pizza, so I am really glad I found a way to make and enjoy a lighter and less messy version. We really like that the main ingredient is chicken and that I use light or reduced fat ingredients to make the dressing. I have always made Buffalo Chicken Balls with Blue Cheese for dinner, but they would also make an amazing appetizer.  This would be a perfect meal to share with your Valentine and it leaves you with plenty of room for dessert!

Buffalo Chicken Balls with Blue Cheese

Buffalo Chicken Balls with Blue Cheese make an amazing dinner and your man will love this meal! They would also be a great appetizer!
Ingredients
Buffalo Chicken Balls
  • 1 lb ground chicken
  • 4 tbsp. butter
  • ½ cup Frank’s RedHot Hot Sauce
  • 1 tsp salt
  • 1 stalk celery, diced
  • 1 egg
  • 1 cup bread crumbs
Blue Cheese Dressing
  • 8 oz light sour cream
  • ½ cup 1% milk
  • ½ cup reduced fat blue cheese crumbles
  • ½ cup reduced fat mayonnaise
  • 1 tsp salt
  • 1 tbsp red wine vinegar

Instructions
  1. Preheat oven to 450 degrees
  2. In a small pot, add butter and hot sauce on low heat and whisk until butter is melted
  3. Set the pot aside to cool for about 10 minutes
  4. Coat a 9×13 pan with Pam spray
  5. In a bowl, combine chicken, salt, celery, egg, bread crumbs, and cooled hot sauce mixture
  6. With your hands, mix until completely combined
  7. Roll the mixture into small balls, packing meat firmly
  8. Place balls evenly in rows in the 9×13 pan
  9. Bake until the meatballs are firm and cooked through, about 20 minutes
  10. Cool for about 5 minutes
  11. Make the dressing: Combine all ingredients in a bowl and whisk until completely blended
  12. If desired, drizzle the meatballs with extra hot sauce and serve with the blue cheese dressing

  13. I have one question. I want to make these tomorrow but I don’t see anywhere what size meatball to make or about how many it makes. Can you give me a ballpark as to how large they should be?

    • Susan, you will love them! You can do about a tablespoon, maybe a little more, for each meatball and you should get about 20-24 balls. I hope that helps! Enjoy them!!!
