Avocado & Feta DipWe are loving appetizers this week since Super Bowl is coming up!  Who am I kidding, we love appetizers all the time, but it is a good week to get new ideas for the game!  I love guacamole, but wanted to try something a little different, so I am glad I came across a great recipe for Avocado and Feta Dip at Or So She Says. What an outstanding way to combine flavors!  I love dips and this one was no exception!  Thank goodness it was time to pick up my daughter from school or I might have eaten the whole bowl right then and there.  The original recipe says to chill for a few hours before eating, but there was no chilling involved that day.  I immediately dove in and every bite was delicious! I made this after an intense work out at boot camp and maybe it was not the best choice for a post workout snack (or lunch), but not only was it fresh and tasty, but considering the ingredients, it really wasn’t that unhealthy.  Avocados are full of good fat, right?!  It is perfect with Pita Chips!

Avocado and Feta Dip is a perfect combination of fresh and tasty ingredients for an amazing appetizer! It would be great for Super Bowl!
Ingredients
  • 1 chopped Roma tomato
  • 2 chopped avocados
  • 1 clove garlic, minced
  • 1 TBS fresh, chopped oregano
  • ¼ cup chopped red onion
  • 1 TBS olive oil
  • 1 TBS Pinot Grigio white wine vinegar
  • 6 oz. crumbled feta cheese

Instructions
  1. In a bowl, stir together the chopped tomato, avocados, garlic, oregano, and red onion
  2. Gently stir in olive oil and white wine vinegar
  3. Stir in feta
  4. Chill for at least a couple hours
  5. Enjoy

 

Revised Jalapeno BitesSuper Bowl is right around the corner and we all need some super delicious appetizers to snack on, right?  It is great to be able to pick up something quickly and get back to the game so we don’t miss any of the action.  I really wanted the Falcons to make it to the big game, but it will still be fun to watch, while enjoying time with friends and eating yummy food.

Aubrey and I had a girl’s night in a couple of weeks ago with some appetizers and champagne.  We both made a couple of amazing appetizers and played games for a few hours.  One of the appetizers I made was Jalapeno Bites and they were excellent.  Cream cheese and jalapenos as the main ingredients automatically makes for something incredible!  Throw in parmesan cheese and panko breadcrumbs and you get an appetizer that is definitely one you will want again…and again!  My husband tried them later and LOVED them!  I highly recommend making Jalapeno Bites for Super Bowl, or for any party or get together.  They will be a big hit and your man will be very happy!  Jalapeno Bites are also really easy to make and I am looking forward to making them again this weekend for the game!  I was so glad I found this amazing recipe on Pinterest, at Dishing with Leslie.  While we were in California over Christmas break, I had some strange stomach bug for a couple of days and was stuck in bed.  (Thank you to my mom and dad for taking care of the kids). While lying in bed, I got sucked into Pinterest and was looking up some new ideas and recipes.  We get together with friends and family a lot, so appetizers are always a staple at my house. Thank goodness I found Jalapeno Bites because they were awesome!

Jalapeno Bites

Jalapeno Bites are an amazing appetizer with a perfect combination of cream cheese, jalapenos, and parmesan cheese. They are perfect for Superbowl or any party!
Ingredients
  • 1 8 oz block cream cheese, softened
  • 8 oz shredded parmesan cheese (about 2 cups)
  • 4 seeded and chopped jalapenos
  • 1 large egg, beaten
  • ½ tsp salt
  • 2 cups panko breadcrumbs

Instructions
  1. Preheat oven to 350 degrees
  2. Mix your cream cheese, parmesan cheese, jalapenos, egg, and salt to form a paste
  3. Shape the paste into bite sized balls
  4. Roll the balls in the panko
  5. Place on un-greased baking sheet and bake for 15 minutes-20, or until lightly golden brown
